High Dynamic Range photography (HDR) involves taking a number of exposures of the same image, above and below 0EV (perfect exposure). These images are then combined in a software package like Photomatix Pro (which I use). The final result is a photograph which is able to display both the darker and lighter areas of the photo at once - we've in a sense increased the dynamic range of the camera. Now we have a photo more akin to what the human eye can see.
